Naturals & Anaerobics In The House
In Guatemala most coffee is processed by using the washed method. It is by far the most common, with around 98% of the country's production being processed this way. It is the safest option for producers both in terms of correct processing and fewer risks associated with selling their product.
For us at Primavera, it has always been important to improve quality in a sustainable way, and for some of our producers that has meant experimenting with processing methods. This started years ago, with a few bags of a Honey Processes, which has turned into a big production and processing of Naturals and this year even a Natural Anaerobic lot.
Processing in these dry methods (Honey, Natural, Anaerobic) requires a fine balance of the right weather conditions, a good focus on turning the drying cherries often and an investment in the correct equipment. The biggest upside to processing this way is that less water is used, resulting in a more environmentally friendly process.
